Blackberry Mint Ice Pops

OLYMPUS DIGITAL CAMERASummertime has undoubtedly arrived in Portland, and it feels hotter than ever before.  Portlanders do their best to stay cool; jump in the river, seek out a rare air conditioned building, or sip an icy beverage on a patio.  Here is a simple recipe to help you enjoy the sunshine, and cool you down after.

OLYMPUS DIGITAL CAMERAStep 1: Venture out into the warmth and find some wild blackberries! Blackberries grow throughout the city, so choose your favorite bramble bush and pluck 2 cups of berries.

OLYMPUS DIGITAL CAMERAStep 2: Brew mint tea using 1/2 cup of boiling water.  If you desire a sweeter ice pop, mix in the sweetener of your choice.  Once tea has sufficiently steeped, blend blackberries and tea together, pour into molds & freeze for approximately 4 hours.


Step 3: Enjoy your ice pop before it melts!
